1Heat vegetable oil in a large frying pan over a medium-high heat. Slice tomatoes 1/4 inch thick.
2Place flour in a small bowl. Dip tomatoes into the beaten egg, then dredge the tomatoes in the flour. Fry the tomatoes in the oil. Fry for approximately 2 minutes, flip the tomato and fry on the other side another 2 minutes. Sprinkle with salt and pepper to taste.
